Rethink Healthy: Breast Cancer Awareness Month

In 2023, Tahoe Forest Health System (TFHS) adopted a new strategic peak centered on community. The new Community Peak aspires “to be an integrated partner in an exceptionally healthy and thriving community”. One of the ways TFHS will be monitoring Community Peak progress is by tracking and improving mammography rates.

In honor of Breast Cancer Awareness month, this article will highlight why mammography was identified as a key indicator for the new peak and current resources available to support routine and diagnostic mammography.

Recipe of the Month: Mediterranean Grilled Chicken

Ingredients:

  • ½ cup plain nonfat Greek yogurt
  • 1 lemon juiced (about 1/3 cup)
  • ½ cup chopped white onion
  • 4 cloves garlic
  • 1 tablespoon dried oregano
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • 2 tablespoons water
  • 4 3-ounce boneless, skinless chicken breasts

Directions:

  1. Place all marinade ingredients into blender and blend until onion and garlic are finely minced and ingredients are well mixed but still chunky.
  2. Place the chicken breasts into a resealable plastic bag and pour marinade over chicken. Massage the marinade over the chicken in the bag.
  3. Refrigerate the chicken in the marinade for at least two hours or overnight if desired. Prior to cooking, remove the chicken breasts from marinade, leaving a healthy coating of the marinade on the chicken.
  4. Heat barbeque grill on high and clean off grates, as necessary. Lightly apply non-stick spray to barbeque grates and begin to grill the chicken.
  5. Cook chicken 6-8 minutes per side, or until the chicken reaches an internal temperature of 165° F.

Pritkin Chef’s Tips

  • Cube the marinated chicken and skewer with red onion, zucchini, or any vegetables you like for a flavorful Mediterranean kebab. Serve over brown basmati rice with steamed vegetables.
  • Try using a firm white fish such as cod, bass, grouper, haddock, snapper; or tofu as a substitute for chicken – a delicious alternative protein source.
