Recipe: Apricot Crumble Bites

Ingredients
- 1 lb apricots, halved and pitted
- 1 tablespoon old fashioned oats
- 1 tablespoon sliced almonds
- 1 ½ tablespoons light brown sugar
- ¼ teaspoon cinnamon
- ⅛ teaspoon ground ginger
- 1 pinch salt
- 3 tablespoons unsalted butter, melted
- Yogurt for serving (optional)
Instructions
- Adjust oven rack to middle position and preheat oven to 425°F (you can also use a toaster oven).
- Air Fryer: Cut a sheet of parchment paper that will fit the floor of your air fryer basket and then place inside the basket.
- In a small bowl, whisk together oats, almonds, brown sugar, cinnamon, ginger, and salt. Add melted butter and mix until well combined.
- Place apricots cut-site up in baking dish.
- Divide oat topping evenly among apricots, mounding on top of each fruit. Bake until oats are golden and apricots are soft, about 25 minutes (air fry at 350°F for 15 minutes or until golden brown). Let cool slightly then serve warm or at room temperature. Serve with some yogurt on the side if desired.
