Recipe: Balsamic-Maple Glazed Roasted Rainbow Carrots

Ingredients

  • 1 pound rainbow carrots (peeled)

Glaze:

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon pure maple syrup
  • 1 tablespoon olive oil
  • ½ heaping tablespoon grainy mustard
  • ½ tablespoons low sodium soy sauce or tamari
  • 1 teaspoon minced garlic (~ 3-4 cloves)
  • 1/8 teaspoons salt or more to taste
  • 1/8 teaspoons fresh black pepper

Garnish:

  • ¼ cup chopped parsley for garnish

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Wash and peel the carrots and cut off the tops.
  3. Place the prepared carrots to a large baking dish or tray.
  4. In a small bowl, whisk together all the glaze ingredients.
  5. Pour the glaze over the carrots and toss with your hands to evenly combine.
  6. Add to the oven and roast for 30-40 minutes (depending on texture preferences).
    • Tip: The longer you bake them, the softer the inside will get. The thicker your carrots, the longer you’ll need to roast them for.
  7. Garnish with chopped parsley.
    • Tip: For a boost of protein, you can serve them over hummus!
