Recipe: Balsamic-Maple Glazed Roasted Rainbow Carrots

Ingredients
- 1 pound rainbow carrots (peeled)
Glaze:
- 2 tablespoons balsamic vinegar
- 1 tablespoon pure maple syrup
- 1 tablespoon olive oil
- ½ heaping tablespoon grainy mustard
- ½ tablespoons low sodium soy sauce or tamari
- 1 teaspoon minced garlic (~ 3-4 cloves)
- 1/8 teaspoons salt or more to taste
- 1/8 teaspoons fresh black pepper
Garnish:
- ¼ cup chopped parsley for garnish
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Wash and peel the carrots and cut off the tops.
- Place the prepared carrots to a large baking dish or tray.
- In a small bowl, whisk together all the glaze ingredients.
- Pour the glaze over the carrots and toss with your hands to evenly combine.
- Add to the oven and roast for 30-40 minutes (depending on texture preferences).
- Tip: The longer you bake them, the softer the inside will get. The thicker your carrots, the longer you’ll need to roast them for.
- Garnish with chopped parsley.
- Tip: For a boost of protein, you can serve them over hummus!
