Recipe: Colorful Citrus Winter Salad

Colorful Citrus Winter Salad on a plate

Servings: 4-6

Salad

  • 6 cups mixed salad greens
  • 1 cup thinly sliced purple cabbage or radicchio
  • 1 cup pink grapefruit sections
  • 1 cup navel orange sections
  • 3/4 cup blood orange sections
     

Dressing

  • 1/4 cup minced shallots
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon white wine vinegar or champagne vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Toppings

  • 1/2 cup pomegranate arils
  • 2 tablespoons shelled pistachios
     

* You can use your favorite salad blend from the store or create your own that includes ANY leafy greens such as Romaine lettuce, spinach, kale, arugula, endive or escarole. Have fun with it!

Directions:
1) Combine all five “salad” ingredients
2) Whisk together all “dressing” ingredients
3) Toss together the salad and dressing, and divide into 4-6 equal portions
4) Mix “toppings” and divide into 4-6 equal portions. Sprinkle the toppings over each salad portion for some extra crunch, nutrition, and color.
