Recipe: Green Goddess Dressing for Salad Greens

Ingredients

  • ½ cup non-fat Greek yogurt
  • ¼ cup tahini
  • 1 cup fresh parsley
  • 1 cup leafy herbs (ex: dill, mint cilantro, parsley, tarragon, etc.)
  • 2 tablespoons chopped chives
  • 2 tablespoons fresh lemon juice,
  • ½ teaspoon lemon zest
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 large or 2 medium garlic cloves
  • 1 tablespoon olive oil or avocado oil
  • Salt and pepper to taste (generally ¼  teaspoon)

Instructions

  1. Place all of the ingredients in a blender or food processor and blend until smooth. Add the tahini last for easier blending.
  2. If your dressing is too thick, add water, one tablespoon at a time, and re-blend until you get the consistency you are looking for.
