Recipe: Orange and Arugula Salad

Orange, red onion and arugula salad

Ingredients

  • 2-3 large navel oranges, peeled and sliced
  • 1 cup arugula
  • ½ cup red onion, thinly sliced

Dressing:

  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dijon mustard
  • 1 teaspoon maple syrup, or other liquid sweetener
  • ¼ teaspoon sea salt
  • pinch black pepper
  • ¼ cup walnuts or almond slices

Instructions

  1. Rinse off all of the produce and pat dry.
  2. Remove peels from oranges and discard them. Then, using a sharp knife, slice the oranges in round slices.
    • Tip: you can zest the oranges and freeze it to save for another recipe.
  3. In a small bowl, whisk together the dressing ingredients.
  4. In a large bowl, mix the arugula, red onion and oranges.
  5. To serve, drizzle dressing over salad and garnish with walnuts or almonds.
  6. Store in an airtight container up to 2 days once dressed.
