Recipe: Orange and Arugula Salad

Ingredients
- 2-3 large navel oranges, peeled and sliced
- 1 cup arugula
- ½ cup red onion, thinly sliced
Dressing:
- 2 tablespoons lemon juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon dijon mustard
- 1 teaspoon maple syrup, or other liquid sweetener
- ¼ teaspoon sea salt
- pinch black pepper
- ¼ cup walnuts or almond slices
Instructions
- Rinse off all of the produce and pat dry.
- Remove peels from oranges and discard them. Then, using a sharp knife, slice the oranges in round slices.
- Tip: you can zest the oranges and freeze it to save for another recipe.
- In a small bowl, whisk together the dressing ingredients.
- In a large bowl, mix the arugula, red onion and oranges.
- To serve, drizzle dressing over salad and garnish with walnuts or almonds.
- Store in an airtight container up to 2 days once dressed.
